Nduja is a particularly spicy, spreadable pork sausage from the small Calabrian town of Spilinga in Southern Italy.  

It is known all over the world for its unmistakable hot spicy taste, its soft texture and its intense red color.

An essential feature of nduja is that it is free of dyes or preservatives: in fact, the chili pepper is a natural antioxidant that allows the preservation of this sausage.

Nduja does not need to be cooked before eating and it is suitable for a variety of dishes.

Given its unique flavor, it does not need to be combined with many other ingredients: it is perfect for a tasty starter if spread on a slice of lightly toasted bread, perhaps accompanied by a slice of ripe cheese.

Its texture also allows it to be used in cooking, to add colour and heat.

It can be stirred through cooked pasta or as a pizza topping.

Our recommendation:

In Calabria, nduja is often used to season spaghetti with oil and garlic: just drain the pasta al dente and dress it with a preparation of browned nduja for a real explosion of taste.

For the more daring ones, the advice is to enjoy it on pizza or on a white focaccia.

Nduja can also be added to scrambled eggs or omelettes, dabbed onto a potato frittata, stirred into a savoury muffin mix, or used in soups and stews of all kinds.  

 

Directions of use:

Once opened, keep refrigerated and consume within 15 days.
