With its large grains and elongated shape, this rice is certainly the one that remains ‘al dente’.

Also known as ‘the king of rice’, Carnaroli is among the most popular varieties of Italian rice in the world, for its excellent resistance to being overcooked, and the ability to absorb aromas and condiments in an excellent way.

The grain maintains its consistency for a long time even once cooked.

All these characteristics make it ideal for your risotto.


About the producer:

La Balocchina starts its history in 1930 in Vercelli, Piedmont, the same place where rice has been produced since the 1500. Today, La Balocchina is still using artisanal techniques, like stone refining, as well as being attentive to the sustainability of the whole process, from field to table.

Among the many excellences for which Piedmont is famous, Vercelli, also known as the ‘City of Rice’, takes a particular place. Thanks to its predominant territorial peculiarity, this is the province of reference for European rice production.  


Our recommendation:

Boil 650ml of water and keep aside ready to use.

Toast the the rice in a pan with two spoons of olive oil or 20g of butter. 

Stir continuously for a minute then add half glass of white wine (if you like, you can skip the wine and pass to the next step).

Once the alcohol is evaporated add the hot water previously prepared.

Cook for 18 minutes, stirring and adding hot water when needed. Be careful not to add to much water, a little bit at the time, so not to have a runny risotto. Enjoy!


Directions of use:

Cooking time: 18 -19 minutes.

Store in a cool dry place.
